About The Petit Pain

The Petit Pain is a new artisan French bakery launching in New York. We are built around one thing: exceptional baguettes, baked fresh before dawn, every morning. Small and friendly team, clear standards, serious bread.

The Role

You will be our baker, working independently in our Brooklyn commercial kitchen starting early morning. Your shift runs 4 hours, 5 days per week (Mon / Wed / Fri / Sat / Sun). The heart of your work is the baguette — organic flour, long cold fermentation, shaped and baked fresh every morning. You will also oversee pastry production, running simultaneously on a separate deck.

This role is for an experienced artisan baker who values independence, takes pride in consistency, and wants to set the quality standard for a brand being built from scratch.

What You Will Do
  • Produce baguettes and naturally leavened breads (levain) to a high standard
  • Execute mixing, scaling, shaping, and baking with consistency
  • Manage fermentation, hydration, and proofing with attention to detail
  • Maintain rigorous quality standards on every unit: crust color, ear development, crumb structure, and weight
  • Oversee pastry production running simultaneously on a separate oven deck
  • Keep the kitchen clean and organized throughout the shift
What We Are Looking For
  • Training or experience in artisan bread (French or European techniques strongly preferred)
  • A genuine mastery of the French baguette — shaping, scoring, steam baking — you have made hundreds of them, and it shows
  • Comfort working independently during early morning hours with no supervision
  • Reliability above everything else — the operation depends on you being there
  • Holds or willing to obtain NYC Food Handler Certificate before start (online, ~$15, 1 hour)
  • Reliable transportation to Brooklyn by 2:00/3:00 AM

Formal culinary school is a plus, not a requirement. Your baguette is the application.

What We Offer
  • $24.00 – $28.00 / hour depending on experience
  • 20 guaranteed hours per week — 5 mornings × 4 hours
  • 1099 contractor to start, with a clear path to W-2 as we scale
  • Tuesday and Thursday always off — no exceptions
  • No evenings, no lunch rush, no front-of-house — just the craft
